Let’s get cooking!

Ingredients:

2 medium zucchinis, thinly sliced
2 medium yellow squashes, thinly sliced
1 large onion, thinly sliced
2 cloves garlic, minced
1 cup shredded mozzarella cheese
1 cup grated Parmesan cheese
1 cup heavy cream
1 tablespoon olive oil
1 teaspoon dried thyme
1 teaspoon dried basil
Salt and pepper to taste
1/2 cup breadcrumbs (optional for topping)

Instructions:

Preheat your oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sliced onion, sautéing until the onion becomes translucent and fragrant, about 5 minutes.
Layer the thinly sliced zucchinis and yellow squashes in a greased baking dish, alternating between the two for a visually appealing pattern.
In a medium bowl, combine the heavy cream, dried thyme, dried basil, salt, and pepper. Pour this mixture evenly over the layered vegetables.

Sprinkle the shredded mozzarella cheese evenly over the top of the vegetables.
Top with grated Parmesan cheese, ensuring an even distribution.
If using, sprinkle the breadcrumbs over the top for an additional crunchy texture.
Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the vegetables are tender.
Allow the gratin to rest for a few minutes before serving to let the flavors meld together perfectly.

Notes:
For a richer flavor, consider incorporating a mixture of Gruyère and mozzarella cheeses.
This dish pairs excellently with roasted meats or as a standalone vegetarian entree.
Adjust the seasoning according to your preference and the natural flavors of the vegetables.
