Zucchini Cheese Bread

Ingredients:
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried thyme
2 large eggs
1/2 cup buttermilk
1/4 cup vegetable oil
1 cup grated zucchini (about 1 medium zucchini)
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley (optional)

Directions:
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.
In a large bowl, whisk together the flour, baking powder, baking soda, salt, garlic powder, onion powder, and dried thyme.
In a separate bowl, beat the eggs and then add the buttermilk and vegetable oil. Mix until well combined.
Add the wet ingredients to the dry ingredients and stir until just combined.
Fold in the grated zucchini, shredded cheddar cheese, grated Parmesan cheese, and chopped parsley (if using).
Pour the batter into the prepared loaf pan and spread it out evenly.
Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
