A refreshing and vibrant salad perfect for any occasion, featuring a zesty citrus poppy seed dressing!

Ingredients:

For the Salad:

12 mandarin oranges, divided (for dressing and salad)
2 cups strawberries, sliced
5 kiwi, peeled and sliced
1 pineapple, peeled, cored, and cut into bite-size chunks
3 mangoes, peeled, pitted, and cut into bite-size chunks

Citrus Poppy Seed Dressing:

1 medium lemon
1 lime
1/4 cup honey
1/2 teaspoon ginger paste, or grated fresh ginger
1/2 teaspoon poppy seeds

Instructions:

1️⃣ Prepare the Dressing:

Wash and dry the lemon, lime, and 2 mandarin oranges.
Zest the washed citrus fruits with a zester or fine grater and add the zest to a 1-cup measuring cup or small bowl.
Cut each zested fruit in half and squeeze the juice into the measuring cup. You should get about 1/2 cup of juice.
Add the honey, ginger, and poppy seeds to the juice mixture and whisk until combined. Set aside, or cover and refrigerate if serving more than one day later.

2️⃣ Prepare the Fruit:

Slice the strawberries and kiwi.
Section the remaining mandarin oranges.
Peel and core the pineapple, and peel and pit the mangoes, then cut both into bite-size chunks.
Place all the prepared fruit in a large bowl.

3️⃣ Combine and Serve:

Pour the dressing over the fruit and toss to coat evenly.
Refrigerate the fruit salad for about 30 minutes before serving to allow the flavors to meld.
