Ingredients:

  • 1 onion
  • oil
  • 2  potatoes
  •  eggs
  • salt to taste

How to do it:

Cut the onion in half and then into slices.
In a pan add a drizzle of olive oil, the onion and sauté.
Cut the potatoes in half and then into slices, then add them to the pan and fry for 10 to 15 minutes over medium/high heat.
In a bowl add the eggs, then place the potatoes in the bowl and mix everything very well.
Add salt, mix and let rest for 15 minutes.
In a pan add olive oil, spread it well with a brush, add the egg mixture with potatoes and let it fry for about 1 minute over high heat, then reduce the heat and leave for another 2 to 3 minutes.
Turn the side and let it fry for another 2 to 3 minutes.
