Ingredients:
2 pounds chicken breasts, cut into bite-sized pieces
1/4 cup flour
Salt and pepper to taste
2 tablespoons vegetable oil
For the Sauce:
1/3 cup honey
1/4 cup soy sauce
1/4 cup apple cider vinegar (as a substitute for any wine-based vinegar)
1 tablespoon minced garlic
1 tablespoon grated ginger
2 teaspoons crushed red pepper flakes (adjust based on spice preference)
1 bell pepper, sliced
1 onion, sliced

Directions:
Prepare the Chicken:
In a bowl, combine the chicken pieces with flour, salt, and pepper. Toss to coat evenly.
Cook the Chicken:
Heat the vegetable oil in a large skillet over medium-high heat.
Add the chicken in batches, cooking until golden and cooked through. Remove chicken and set aside.
Make the Sauce:
In the same skillet, reduce heat to medium and add the bell pepper and onion. Sauté until just tender.
Add the garlic and ginger, cooking until fragrant, about 1 minute.
Whisk in the honey, soy sauce, apple cider vinegar, and red pepper flakes. Bring the mixture to a simmer.
Return the chicken to the skillet and toss to coat with the sauce. Continue to cook until the sauce has thickened slightly, about 3-4 minutes.

Serve:
Serve hot, garnished with additional red pepper flakes if desired. Great over rice or noodles.
