Sweet and Sour Cucumber Salad with Chicken

Ingredients:

  • 2 chicken breasts
  • Hot water
  • salt to taste
  • black pepper to taste
  • 2 onions
  • 4 tablespoons of vinegar
  • 1 tablespoon of sugar
  • 50ml of water
  • 1 cucumber
  • 4 boiled  eggs
  • 100g parmesan
  • parsley to taste
  • 100g mayonnaise

Way of doing:

Place the chicken breasts in a pan of boiling water, add salt and black pepper, turn the chicken over and cook for 15 minutes.
Cut the onion into cubes, then transfer to a bowl.
Add the vinegar, sugar, water, salt and mix well.
Remove the chicken from the pan and shred it completely.
Transfer the shredded chicken to a bowl, add the drained onion and mix with the chicken.
Cut the cucumber in half, then lengthwise and then into slices.
Transfer the cucumber to the bowl. Add the salt, black pepper, parmesan, parsley and mix everything very well. To finish, add the mayonnaise and mix well. Refrigerate for 1 hour.
Cut the  eggs in half and then into smaller pieces, then add them to the bowl.
