Ingredients:
Olive Oil:
15 grams (1 tablespoon)
Warm Water: 180 ml (¾ cup)
Active Dry Yeast: 3 grams (1 teaspoon)
White Sugar: 10 grams (2 teaspoons)
All-Purpose Flour: 300 grams (2 cups)
Salt: 5 grams (1 teaspoon)

Instructions:

  1. Activate the Yeast: In a bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes, or until the mixture becomes frothy.
  2. Mix and Knead: In a large bowl, mix the flour and salt. Create a well in the center, then add the yeast mixture and olive oil. Stir to form a shaggy dough.
  3. Knead the Dough: Turn the dough out onto a floured surface and knead for 10 minutes, until it becomes smooth and elastic.
  4. Let it Rise: Place the dough in an oiled bowl, cover with a damp cloth, and let it rise in a warm spot for 1 hour, or until doubled in size.
  5. Shape the Flatbreads: Punch down the dough and divide it into 6 equal pieces. Roll each piece into a ball and then flatten it into a disc about ¼ inch thick.
  6. Cook the Flatbreads: Heat a skillet over medium-high heat and add a little oil. Cook each flatbread for 2-3 minutes on each side, until golden brown and puffed.
  7. Repeat and Serve: Continue cooking the remaining flatbreads, adding oil to the pan as needed. Serve warm with your favorite toppings or dips.
