Ingredients:
For the Shrimp Stir Fry:
1 lb large shrimp, peeled and deveined
2 tablespoons vegetable oil
1 bell pepper, sliced (any color)
1 medium carrot, sliced thinly
1 small onion, sliced
2 cloves garlic, minced
1 cup broccoli florets
1/2 cup snap peas
1/4 cup soy sauce
1 tablespoon sesame oil
2 teaspoons cornstarch dissolved in 2 tablespoons water
1 teaspoon ginger, grated
1/4 teaspoon red pepper flakes (optional)

Directions:
Prepare the ingredients:
Rinse the shrimp under cold water and pat dry with paper towels.
Cook the vegetables:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Add the carrots, bell pepper, and onion to the skillet and stir-fry for about 3-4 minutes until just tender.
Add the garlic, broccoli, and snap peas, and continue to stir-fry for another 2-3 minutes. Remove all vegetables from the skillet and set aside.
Cook the shrimp:
In the same skillet, add the remaining tablespoon of vegetable oil.
Add the shrimp and cook for about 2-3 minutes on each side until they turn pink and are cooked through.
Combine and finalize:
Return the vegetables to the skillet with the shrimp.
Mix the soy sauce, sesame oil, cornstarch mixture, ginger, and red pepper flakes in a small bowl. Pour this sauce over the shrimp and vegetables in the skillet.
Stir everything together and cook for an additional 1-2 minutes until the sauce has thickened and everything is heated through.
Serve:
Serve the shrimp stir fry immediately over rice or noodles, garnished with sesame seeds or sliced green onions if desired.
