Savory Zucchini Fritters: Perfect for Blood Sugar Health

Ingredients:
2 medium zucchinis
3 chicken eggs
Salt, to taste
3 tablespoons flour
3 spring onions, finely chopped
Olive oil, for frying

Instructions:
Prepare the Zucchini:

Use a special grater to grate the zucchinis into fine shreds.
Place the grated zucchini in a colander and sprinkle with a little salt. Let it rest for about 10 minutes to draw out excess moisture.
After resting, squeeze out the excess liquid from the zucchini using your hands or a clean kitchen towel.

Mix the Batter:
In a large mixing bowl, beat the 3 chicken eggs.
Add the grated and squeezed zucchini to the bowl.
Season with salt to taste.
Add the 3 tablespoons of flour and mix well until the ingredients are fully combined.
Stir in the finely chopped spring onions.

Cook the Fritters:
Heat a drizzle of olive oil in a large frying pan over low heat.
Scoop spoonfuls of the zucchini batter into the pan, flattening them slightly with the back of the spoon to form fritters.
Cover the pan with a lid and cook the fritters for 4-5 minutes on each side, or until golden brown and cooked through.

Once cooked, transfer the fritters to a plate lined with paper towels to absorb any excess oil.
