Savory Cajun Chicken Stir-Fry

Ingredients:
For the Cajun Spice Mix:
1/2 teaspoon smoked paprika (optional, for extra smokiness)
2 tablespoons paprika
1 tablespoon cayenne pepper (adjust to taste)
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon ground black pepper
1 teaspoon salt

For the Chicken:
1 lb (450 g) boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)
2 tablespoons vegetable oil (for cooking)
3 cloves garlic (minced)

For the Stir-Fry:
1 red bell pepper (sliced)
1 green bell pepper (sliced)
1 cup snap peas or snow peas
1 medium onion (sliced)
1/4 cup soy sauce or tamari
1 tablespoon oyster sauce (optional)
1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening, optional)
Cooked rice or noodles (for serving)

Instructions:
Serve hot over cooked rice or noodles.

Prepare the Cajun Spice Mix:
In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, dried oregano, ground black pepper, salt, and smoked paprika (if using).

Season the Chicken:
Toss the chicken pieces with the Cajun spice mix until evenly coated.

Cook the Chicken:
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add the seasoned chicken and cook for 5-7 minutes, or until the chicken is cooked through and browned. Remove the chicken from the skillet and set aside.

Cook the Vegetables:
