Roast meat with vegetables

Ingredients:

  • 600g of meat
  • 1 onion
  • 1 carrot
  • 1 zucchini
  • 1 red pepper
  • 4 potatoes
  • 5 tablespoons of olive oil
  • 1 tablespoon tomato sauce
  • salt
  • thyme
  • oregano
  • Black pepper
  • rosemary
  • 2 garlic cloves
  • 150g mozzarella

Way of doing:

 
Cut the meat into slices and then into smaller pieces;
Reserve in a baking dish;
Cut the onion into strips and also add it to the pan;
Cut the carrot into slices and place with the other ingredients;
Remove the ends of the zucchini and cut it into slices, adding them to the baking dish;
Cut the red pepper and pour it into the pan;
Cut the potatoes into pieces and add them to the rest of the recipe;
In a container add the olive oil, tomato paste, salt, thyme, oregano, black pepper, rosemary, garlic and mix everything;
Add the sauce over the recipe and spread well;
Cover with aluminum foil and bake at 200°C for 60 minutes.
Remove from the oven and add the mozzarella;
Bake at 200°C for another 10 minutes;
