Potato, Onion and Sausage Omelette

Ingredients:

  • 1 onion
  • 1 tablespoon of olive oil
  • 2 potatoes
  • 1 pinch of salt
  • 2 sausages
  • parsley to taste
  • 4 eggs
  • ½ teaspoon of salt
  • ¼ teaspoon black pepper
  • 30g mozzarella

How to do it:

Cut the onion in half and then into slices.
In a pan add the olive oil, the onion and cook for 4 to 5 minutes until they are soft, stirring occasionally.
Cut the potatoes into thin slices and then into strips.
In the pan add the salt and stir, then add the potatoes and fry for 3 to 4 minutes.
Cut the sausages into small pieces, place them in the pan and mix with the other ingredients.
Cut the parsley, add it to the pan and mix with the other ingredients.
In a container add the eggs, salt, black pepper, grate the mozzarella and mix everything.
Add the egg mixture to the pan, cover and cook for 8 to 10 minutes.
Turn the recipe over with the help of a plate, to cook on the other side as well.
