Oven Baked Potato and Cheese Frittata

Combining the comforting flavors of tender potatoes with creamy mozzarella and fresh chives, this dish makes for a versatile breakfast, brunch, or even a light dinner.

Ingredients:
120g mozzarella
1 onion
2 tablespoons olive oil
1 pinch of salt
700g potatoes
2 tablespoons olive oil
salt to taste
8 eggs
chives to taste
12 olives
black pepper to taste
1 tablespoon olive oil

How to do it:

Cut the onion in half and then into very thin slices.
In a pan, add the olive oil, onions, and salt and sauté, stirring occasionally, until the onion is soft.
Cut the potatoes into thin slices.
Remove the onions from the pan and place on a plate to set aside.
In the same pan, add the olive oil, then half of the potatoes, season with salt and sauté, stirring occasionally, until soft, for about 8 to 10 minutes.
In a bowl, add the eggs.
Finely chop the chives and add to the bowl with the eggs.
Cut the olives into thin slices, then chop them into very small pieces.
Place the olives in the bowl, add the black pepper and mix everything well.
Remove the potatoes from the pan and place them in the bowl with the other ingredients. Add the onions that were set aside and stir to mix everything.
In a pan, add the olive oil, then half of the mixture, spreading it out well.
Cut the mozzarella into thin slices, place in the pan on top of the mixture, then cover the mozzarella with the remaining mixture.
Let it fry on low heat for 5 minutes.
Bake for 20 minutes and let it bake until the eggs are firm.
