Nut and Seed Cookies Recipe

These Nut and Seed Cookies are a healthy and delicious snack packed with a variety of nuts, seeds, and dried apricots, all held together with natural honey. Ingredients

  • 100g dried apricots (about ¾ cup)
  • ¼ cup walnuts, chopped (30g)
  • ¼ cup hazelnuts, chopped (30g)
  • 2 tablespoons pumpkin seeds (15g)
  • 2 tablespoons sunflower seeds (15g)
  • 1 tablespoon sesame seeds (10g)
  • 1 tablespoon flaxseed (10g)
  • ¼ cup almonds, chopped (30g)
  • 2 tablespoons pine nuts (15g)
  • 2 tablespoons natural honey (40ml)
  • 1 egg white
  • Pinch of salt

Directions

1. Prepare the Dried Apricots:

  • Place the dried apricots in a bowl and cover with cold water. Let them soak for 15-20 minutes to rehydrate.
  • Drain the water and chop the dried apricots into small pieces.

2. Prepare the Nuts and Seeds:

  • Chop the walnuts with a knife.
  • In a large mixing bowl, combine the chopped walnutshazelnutspumpkin seedssunflower seedssesame seedsflaxseedalmonds, and pine nuts.

3. Combine Ingredients:

  • Add the chopped dried apricots to the nut and seed mixture.
  • Pour in 40 ml of natural honey and add 1 egg white.
  • Add a pinch of salt.
  • Mix well until all the ingredients are evenly combined.

4. Form the Cookies:

  • Preheat your oven to 180°C (360°F).
  • Line a baking sheet with parchment paper.
  • Using your hands, form the mixture into small cookie shapes and place them on the prepared baking sheet.

5. Bake:

  • Bake in the preheated oven for 15-20 minutes, or until the cookies are golden brown and set.

6. Cool and Serve:

  • Remove the cookies from the oven and let them cool on the baking sheet for a few minutes.
  • Transfer the cookies to a wire rack to cool completely.
