Ingredients
- 100g dried apricots (about ¾ cup)
- ¼ cup walnuts, chopped (30g)
- ¼ cup hazelnuts, chopped (30g)
- 2 tablespoons pumpkin seeds (15g)
- 2 tablespoons sunflower seeds (15g)
- 1 tablespoon sesame seeds (10g)
- 1 tablespoon flaxseed (10g)
- ¼ cup almonds, chopped (30g)
- 2 tablespoons pine nuts (15g)
- 2 tablespoons natural honey (40ml)
- 1 egg white
- Pinch of salt
Directions
1. Prepare the Dried Apricots:
- Place the dried apricots in a bowl and cover with cold water. Let them soak for 15-20 minutes to rehydrate.
- Drain the water and chop the dried apricots into small pieces.
2. Prepare the Nuts and Seeds:
- Chop the walnuts with a knife.
- In a large mixing bowl, combine the chopped walnuts, hazelnuts, pumpkin seeds, sunflower seeds, sesame seeds, flaxseed, almonds, and pine nuts.
3. Combine Ingredients:
- Add the chopped dried apricots to the nut and seed mixture.
- Pour in 40 ml of natural honey and add 1 egg white.
- Add a pinch of salt.
- Mix well until all the ingredients are evenly combined.
4. Form the Cookies:
- Preheat your oven to 180°C (360°F).
- Line a baking sheet with parchment paper.
- Using your hands, form the mixture into small cookie shapes and place them on the prepared baking sheet.
5. Bake:
- Bake in the preheated oven for 15-20 minutes, or until the cookies are golden brown and set.
6. Cool and Serve:
- Remove the cookies from the oven and let them cool on the baking sheet for a few minutes.
- Transfer the cookies to a wire rack to cool completely.
