Ingredients:

1 lb chicken
12 oz sausage (andouille or any smoked sausage)
1 tbsp oil
3 tsp Cajun seasoning

1 ¼ cups vegetable oil
1 cup all-purpose flour
64 oz chicken broth

For the Gumbo:
½ cup bell pepper, diced
½ cup celery, diced
½ cup onions, diced
1 cup okra, sliced
1 tsp black pepper
2 tsp Cajun seasoning
3 tsp gumbo file
2 tsp hot sauce
¼ tsp salt

Instructions:
1️⃣ Season and Sear: Season the chicken and sausage with 3 tsp of Cajun seasoning. Heat 1 tbsp oil in a large pot over medium heat, add the seasoned chicken and sausage, and sear until golden-brown. Remove the chicken.
2️⃣ Make the Roux: In the same pot, combine 1 ¼ cups vegetable oil and 1 cup all-purpose flour. Stir continuously over medium heat until the roux is a deep, rich brown color (about 45 minutes).
3️⃣ Add Vegetables: Add diced bell pepper, celery, and onions to the roux. Let them soften for about 5 minutes, then slowly pour in the chicken broth. Stir until well combined and bring to a simmer.
