Ingredients:
For the Banana Cake:

1 cup (2 sticks) unsalted butter, softened
3 cups granulated sugar
4 large eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
3 ripe bananas, mashed
1 cup buttermilk

For the Walnut Filling:
1 cup chopped walnuts
1 cup granulated sugar
1/2 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup (1 stick) unsalted butter, softened
1 cup evaporated milk

For the Cream Cheese Frosting:
8 ounces cream cheese, softened
1 cup (2 sticks) unsalted butter, softened
3 cups confectioners’ sugar
1 teaspoon vanilla extract

Directions:
1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round baking pans.
2. Make the Banana Cake: In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Alternately add the dry ingredients and the buttermilk to the wet ingredients, beginning and ending with the dry ingredients. Fold in the mashed bananas. Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
3. Make the Walnut Filling: In a medium bowl, combine the walnuts, sugar, flour, cinnamon, and nutmeg. In a separate bowl, cream together the butter and evaporated milk. Gradually add the dry ingredients to the wet ingredients, stirring until well combined.
4. Assemble the Cake: Place one of the cooled cake layers on a cake plate or serving dish. Spread with half of the walnut filling. Top with the second cake layer and spread with the remaining walnut filling.
5. Make the Cream Cheese Frosting: In a large bowl, beat together the cream cheese and butter until smooth. Gradually add the confectioners’ sugar and vanilla extract, beating until light and fluffy. Frost the cake with the cream cheese frosting.
6. Refrigerate the cake for at least 4 hours before serving. Enjoy!
