Lamb Chops over Lobster Mash with Asparagus

Ingredients:
For the Lamb Chops:

8 lamb chops, about 1 inch thick
Salt and pepper to taste
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped

For the Lobster Mash:
2 large potatoes, peeled and cubed
1/2 cup heavy cream
4 tablespoons unsalted butter
1/2 cup cooked lobster meat, chopped
Salt and pepper to taste
1 tablespoon fresh chives, chopped (for garnish)

For the Asparagus:
1 bunch asparagus, trimmed
1 tablespoon olive oil
Salt and pepper to taste
1 clove garlic, minced
Directions:

1️⃣ For the Lobster Mash:
In a large pot, bring water to a boil and cook the cubed potatoes until tender, about 15-20 minutes. Drain and return to the pot.
Add the heavy cream and butter to the potatoes. Mash until smooth and creamy. Stir in the chopped lobster meat. Season with salt and pepper to taste. Cover and keep warm.
2️⃣ For the Lamb Chops:
Season the lamb chops generously with salt and pepper on both sides.
In a large skillet, heat the olive oil over medium-high heat. Add the lamb chops and sear for 3-4 minutes on each side, or until they reach your desired level of doneness. Remove the lamb chops from the skillet and set aside.
In the same skillet, add the minced garlic, fresh rosemary, and fresh thyme. Sauté for about 1 minute until fragrant. Return the lamb chops to the skillet and coat them with the garlic herb mixture. Remove from heat.
3️⃣ For the Asparagus:
In a separate skillet, heat the olive oil over medium heat. Add the asparagus and season with salt, pepper, and minced garlic. Sauté for 5-7 minutes, or until the asparagus is tender-crisp.
4️⃣ To Serve:
Plate a generous scoop of lobster mash in the center of each plate. Arrange the lamb chops on top of the mash.
Place the sautéed asparagus on the side. Garnish with fresh chopped chives and serve immediately.
