Ingredients:

For the Pancakes:
1 1/2 cups all-purpose flour
2 tablespoons granulated sugar

1 cup milk
1/4 cup lemon juice
2 tablespoons lemon zest
1 egg
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract

Instructions:

Prepare the Pancake Batter:
In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
In a separate bowl, combine the milk, lemon juice, lemon zest, egg, melted butter, and vanilla extract. Whisk until well combined.
Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay.

Cook the Pancakes:
Preheat a griddle or large non-stick skillet over medium heat. Lightly grease with butter or oil.
Pour about 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
