Healthy and simple dinner – delicious!

Treat yourself to a healthy and simple dinner that’s as delicious as it is satisfying. This recipe combines tender potatoes, succulent chicken breasts, and vibrant bell peppers, all seasoned to perfection with a blend of aromatic spices and olive oil.

The addition of creamy mozzarella and fresh parsley adds a comforting richness and freshness to every bite. Easy to prepare yet bursting with flavor, this dish is sure to become a favorite for any occasion, offering a balanced meal that’s both nutritious and delightful.

Ingredients

  • 700g potatoes

  • water

  • 1 teaspoon of salt

  • 1 onion

  • 3 chicken breasts

  • 1 tablespoon of olive oil

  • 1 teaspoon of salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon paprika

  • 1/2 teaspoon garlic powder

  • 1/2 green pepper

  • 1/2 red pepper

  • 1 tablespoon tomato paste

  • salt

  • 1/2 teaspoon black pepper

  • 60ml of milk

  • 60g mozzarella

  • 1 tablespoon of olive oil

  • parsley

Way of doing

  • Start by cutting the potatoes into medium pieces.
  • Place the potatoes in a pan of water.
  • Add salt and cook for 15 minutes.
  • Cut the onion into small pieces.
  • Cut the chicken breasts into cubes.
  • In a pan add the olive oil, onion and chicken.
  • Season with salt, black pepper, paprika and garlic powder.
  • Let it fry for 4 minutes.
  • Cut the peppers into small cubes
  • Add to the pan and mix with the chicken
  • Add the tomato paste and fry for another 4 minutes
  • Remove from heat and set aside
  • Season the potatoes with salt, black pepper, milk and mash everything.
  • Add some of the mozzarella and mix well.
  • In a baking dish add the olive oil and spread it with a brush.
  • Apply a little olive oil to your hand, take some puree and shape it into balls.
  • Repeat this process until the puree runs out.
  • Place them all inside the baking dish and use a glass to make a hole in the middle of each one.
  • Bake at 200°C for 30 minutes.
  • Now place the chicken in the hole that was made in each one.
  • Place the rest of the mozzarella on top.
  • Bake at 200°C for 10 minutes.
  • Put parsley on top.
