Fried Potato Dumplings with Parmesan

Ingredients:

  • 1kg of potatoes
  • water
  • salt to taste
  • 1 teaspoon black pepper
  • parsley to taste
  • 1 cup parmesan cheese
  • ½ cup breadcrumbs
  • 3 eggs
  • oil

Way of doing:

Cut the potatoes into medium pieces, then transfer everything to a pan, cover, add salt and cook for 15 minutes.
Transfer the potatoes to a bowl and mash well.
Add the black pepper, parsley, parmesan cheese and mix everything very well.
Add the breadcrumbs and mix everything again.
Add the eggs and mix.
Wet your fingertips with oil, then spread it over your hands to make it easier to shape the dough.
Take a portion of the dough and shape it into a round shape.
In a pan add oil, when it is hot add the potatoes inside and fry on both sides.
