Ingredients

3 Tomatoes
6 Eggs
150g of Mozzarella Cheese
1 Pinch of Salt
1 Pinch of Black Pepper
Parsley to Taste

How to prepare

Start by cutting the tomatoes in half and core all of them. 
Next, cut the back of the tomatoes (vertically) and set aside. 
Now, separate the egg yolks from the egg whites, we’ll be using only the yolks for this recipe. 
Transfer the tomatoes to a medium baking dish.
Put one egg yolk in each tomato and set aside. 
Grate the mozzarella cheese using the large holes in the grater and set aside. 
Season the tomatoes with one pinch of salt and one pinch of black pepper. 
Add the grated mozzarella cheese and parsley to taste. 
Take it to a preheated oven at 180°C (350°F) and bake for 20 minutes. 

Serve.
