Decadent Cheesecake-Filled Chocolate Chip Cookies

Enjoy the ultimate dessert combo with cheesecake stuffed cookies.

Ingredients:
For the Cheesecake Filling:
3 oz cream cheese, softened
3 tablespoons powdered sugar

For the Chocolate Chip Cookie Dough:
1/2 cup butter, slightly softened
1/2 cup brown sugar
1/3 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 3/4 cup flour
3 tablespoons corn starch
1/2 teaspoon baking soda
1/4 teaspoon salt
2/3 cup semi-sweet chocolate chips (plus more for topping)

Instructions:
Prepare the Cheesecake Filling:
Mix cream cheese and powdered sugar until smooth.
Scoop teaspoon-sized portions onto a parchment-lined baking sheet.
Freeze until firm, about 30 minutes.

Prepare the Chocolate Chip Cookie Dough:
Cream butter, brown sugar, and granulated sugar until light and fluffy.
Beat in egg and vanilla extract.
Whisk flour, corn starch, baking soda, and salt in a separate bowl.
Gradually add dry ingredients to wet ingredients, mixing until just combined.
Fold in chocolate chips.

Assemble the Cookies:
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Scoop a tablespoon of cookie dough, flatten slightly, and place a frozen cheesecake filling ball in the center. Wrap dough around it, ensuring it is completely covered. Add more dough if necessary.
Place stuffed dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
Press extra chocolate chips onto the tops of the cookies.

Bake:
Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
