Cucumber Tomato Salad

A refreshing side dish to any meal, this tomato cucumber salad is full of fresh flavors and pairs well with just about any main dish! Put it on repeat for a healthy side and mix it up with different ingredients!

Ingredients:

2 to 3 Tbsp balsamic reduction optional

2 cups fresh tomatoes chopped*

1 large cucumber thinly sliced

½ medium-sized red onion thinly sliced

8 ounces fresh Mozzarella cheese optional**

3 Tbsp olive oil or avocado oil to taste

2 Tbsp red wine vinegar***

½ cup fresh basil leaves thinly sliced

1 sprig fresh dill chopped

½ tsp sea salt to taste

¼ tsp black pepper to taste

Instructions:

Note: If you would like to store the salad for more than 1 day, I suggest mixing in the fresh chopped basil and mozzarella just before serving for the best results. This ensures the salad stays tasting as fresh as possible.

Add all of the ingredients to a large bowl and toss everything together until well-combined. There is no need to prepare the dressing separately from the salad, so feel free to toss every last ingredient into one bowl and mix everything up.

Taste the salad for flavor and add more olive oil, vinegar, sea salt, or black pepper to taste. If you’re feeling fancy and would like to make a balsamic reduction sauce, feel free to drizzle one to two tablespoons of balsamic reduction over the salad.
