Crack Chicken Stuffed Baked Potatoes are a delightful and hearty dish that combines the comforting elements of a classic baked potato with the savory, creamy goodness of crack chicken. Perfect for a satisfying dinner or a filling lunch, these stuffed potatoes offer a rich blend of flavors and textures that will please any crowd. The creamy chicken mixture, seasoned with ranch, paired with crispy bacon, melty cheese, and fresh green onions, makes every bite irresistible. Here’s how you can make this indulgent dish at home:

Ingredients:
4 large russet potatoes
2 cups cooked chicken, shredded
8 oz cream cheese, softened
1 packet ranch seasoning mix
1 cup shredded cheddar cheese
1/2 cup cooked bacon, crumbled
1/4 cup green onions, sliced
Salt and pepper to taste
Olive oil

Directions:

Step 1: Bake the Potatoes
Preheat your oven to 400°F (200°C). Scrub the potatoes clean and dry them. Rub each potato with olive oil and sprinkle with salt. Place the potatoes directly on the oven rack and bake for 45-60 minutes until tender.

Step 2: Prepare the Chicken Mixture
In a large bowl, combine the shredded chicken, cream cheese, ranch seasoning mix, cheddar cheese, crumbled bacon, and green onions. Mix until well combined. Season with salt and pepper to taste.

Step 3: Stuff the Potatoes
Once the potatoes are done, remove them from the oven and let them cool slightly. Cut a slit down the center of each potato and carefully scoop out a portion of the insides, leaving enough to maintain the potato’s shape. Add the scooped-out potato to the chicken mixture and stir to combine.

Step 4: Fill the Potatoes
Fill each potato shell with the chicken mixture, mounding it slightly on top.

Step 5: Bake Again
Place the stuffed potatoes on a baking sheet and return them to the oven. Bake for an additional 15-20 minutes until the filling is hot and the tops are golden and bubbly.
