Corn and Chicken Foil Packets

These easy-to-make packets combine juicy chicken with sweet corn, along with a medley of fresh vegetables and seasonings, all cooked together in foil. Ingredients:
4 boneless, skinless chicken breasts
2 ears of corn, cut into 2-inch pieces
1 red bell pepper, sliced
1 zucchini, sliced
1 red onion, sliced
4 tablespoons of olive oil
2 cloves of garlic, minced
1 teaspoon of smoked paprika
1 teaspoon of dried oregano
Salt and pepper to taste
1 lemon, sliced
Fresh parsley, chopped (for garnish)

Instructions:
Preheat the grill or oven: Preheat your grill to medium-high heat, or set your oven to 400°F (200°C).
Prepare the foil packets: Cut 4 large pieces of aluminum foil, about 12×18 inches each. Place a chicken breast in the center of each piece of foil.
Add the vegetables: Divide the corn, bell pepper, zucchini, and red onion evenly among the foil packets, placing them around the chicken.
Season the packets: Drizzle each packet with olive oil, then sprinkle the minced garlic, smoked paprika, oregano, salt, and pepper over the chicken and vegetables. Top each packet with a lemon slice.
Seal the packets: Fold the sides of the foil over the chicken and vegetables, sealing the packets tightly to ensure steam doesn’t escape.

Cook the packets:
Grill method: Place the foil packets on the grill and cook for 20-25 minutes, turning them over halfway through, until the chicken is cooked through and the vegetables are tender.
Oven method: Place the foil packets on a baking sheet and bake for 25-30 minutes until the chicken is fully cooked and the vegetables are tender.
Serve: Carefully open the foil packets, allowing the steam to escape. Garnish with fresh parsley and serve hot.
Notes:
For extra flavor, you can add a sprinkle of shredded cheese or a drizzle of barbecue sauce before sealing the packets.
