Classic New York Cheesecake with Berry Compote

Ingredients:

For the cheesecake:
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
4 (8 oz) packages cream cheese, softened
1 1/2 cups granulated sugar
4 large eggs
2 teaspoons vanilla extract
1 cup sour cream
1/2 cup heavy cream
For the berry compote:
2 cups mixed berries (strawberries, blueberries, raspberries)
1/4 cup granulated sugar
1 teaspoon lemon juice

Directions:

Prepare the crust:
Preheat oven to 350°F (175°C).
Mix graham cracker crumbs with melted butter until well combined. Press into the bottom of a 9-inch springform pan. Set aside.

Make the cheesecake filling:
In a large mixing bowl, beat cream cheese and granulated sugar until smooth and creamy. Add eggs, one at a time, beating after each addition. Mix in vanilla extract.
Fold in sour cream and heavy cream until the mixture is smooth. Pour over the prepared crust.

Bake the cheesecake:
Bake in the preheated oven for 55 minutes. Turn off the oven, and let the cheesecake sit in the oven with the door closed for 1 hour to prevent cracking.
Remove from oven, and let cool to room temperature, then refrigerate for at least 4 hours, preferably overnight.

Prepare the berry compote:
In a saucepan over medium heat, combine berries, sugar, and lemon juice. Cook until the berries break down and the sauce thickens, about 10 minutes. Let cool.
Serve:
Serve the chilled cheesecake with the berry compote spooned over the top.
