Chinese secret to tenderizing meat!

This hearty beef stew is a delightful blend of rich flavors and comforting textures. The tender beef, marinated in milk and spices, is sautéed to perfection, then simmered with a luscious creamy mustard sauce that elevates the dish. Ingredients:
1kg of beef 500ml of milk
30ml of olive oil
80g of unsalted butter
1 onion
1/2 teaspoon of sweet paprika
3 crushed garlic cloves
1 teaspoon of salt
A pinch of black pepper
30g of mustard
30ml of soy sauce
2 tablespoons of cornstarch
100ml of water
Parsley and chives to taste

Instructions:

  1. Prepare the Marinade:

    • In a large bowl, combine the 500ml of milk, 30ml of soy sauce, and a pinch of salt. This will help tenderize the beef.
    • Add the beef to the marinade, ensuring it’s well-coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  2. Sauté Aromatics:

    • In a large pot or skillet, heat 30ml of olive oil and 80g of unsalted butter over medium heat.
    • Add the finely chopped onion and sauté until it becomes translucent, about 5 minutes.
    • Stir in the crushed garlic and sweet paprika, cooking for another 1-2 minutes until fragrant.
  3. Cook the Beef:

    • Remove the beef from the marinade and pat it dry with paper towels to remove excess liquid.
    • Add the beef to the pot in batches, searing it on all sides until browned. Remove the beef and set it aside.
  4. Make the Sauce:

    • In the same pot, add the reserved marinade (milk mixture) and 100ml of water. Stir well to combine.
    • Add 30g of mustard, 1 teaspoon of salt, and a pinch of black pepper. Bring to a gentle simmer.
  5. Thicken the Sauce:

    • In a small bowl, mix 2 tablespoons of cornstarch with a little cold water to create a slurry.
    • Gradually stir the slurry into the simmering sauce until it thickens to your desired consistency.
  6. Combine and Simmer:

    • Return the browned beef to the pot and stir to coat it in the sauce.
    • Cover and let it simmer on low heat for about 30-40 minutes, or until the beef is tender and cooked through.
  7. Serve:

    • Taste and adjust the seasoning if needed.
