Ingredients:
1kg of beef 500ml of milk
30ml of olive oil
80g of unsalted butter
1 onion
1/2 teaspoon of sweet paprika
3 crushed garlic cloves
1 teaspoon of salt
A pinch of black pepper
30g of mustard
30ml of soy sauce
2 tablespoons of cornstarch
100ml of water
Parsley and chives to taste
Instructions:
-
Prepare the Marinade:
- In a large bowl, combine the 500ml of milk, 30ml of soy sauce, and a pinch of salt. This will help tenderize the beef.
- Add the beef to the marinade, ensuring it’s well-coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
-
Sauté Aromatics:
- In a large pot or skillet, heat 30ml of olive oil and 80g of unsalted butter over medium heat.
- Add the finely chopped onion and sauté until it becomes translucent, about 5 minutes.
- Stir in the crushed garlic and sweet paprika, cooking for another 1-2 minutes until fragrant.
-
Cook the Beef:
- Remove the beef from the marinade and pat it dry with paper towels to remove excess liquid.
- Add the beef to the pot in batches, searing it on all sides until browned. Remove the beef and set it aside.
-
Make the Sauce:
- In the same pot, add the reserved marinade (milk mixture) and 100ml of water. Stir well to combine.
- Add 30g of mustard, 1 teaspoon of salt, and a pinch of black pepper. Bring to a gentle simmer.
-
Thicken the Sauce:
- In a small bowl, mix 2 tablespoons of cornstarch with a little cold water to create a slurry.
- Gradually stir the slurry into the simmering sauce until it thickens to your desired consistency.
-
Combine and Simmer:
- Return the browned beef to the pot and stir to coat it in the sauce.
- Cover and let it simmer on low heat for about 30-40 minutes, or until the beef is tender and cooked through.
-
Serve:
- Taste and adjust the seasoning if needed.
- Garnish with freshly chopped parsley and chives before serving.
-
Enjoy!
- Serve the beef stew with your choice of rice, mashed potatoes, or crusty bread for a satisfying meal.
