Ingredients:

4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes

1 cup cherry tomatoes, halved

1 tablespoon balsamic vinegar

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes

Salt and pepper to taste

8 oz burrata cheese

Fresh basil leaves, for garnish

Instructions:

Prepare the Chicken:

Season the chicken breasts with salt and pepper on both sides.
Cook the Chicken:

Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 5-6 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Sauté the Aromatics:

In the same skillet, add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.

Braised Tomatoes:

Add the diced tomatoes, cherry tomatoes, balsamic vinegar, dried oregano, dried basil, and red pepper flakes (if using) to the skillet. Stir to combine, scraping up any browned bits from the bottom of the skillet.
Simmer:

Bring the mixture to a simmer and cook for about 10-15 minutes, or until the tomatoes have broken down and the sauce has thickened slightly. Season with salt and pepper to taste.

Combine Chicken and Sauce:

Return the cooked chicken breasts to the skillet, nestling them into the tomato mixture. Spoon some of the sauce over the chicken and let it simmer for an additional 5 minutes to meld the flavors.

Serve:

Transfer the chicken and tomato sauce to serving plates. Tear the burrata cheese and place it on top of the chicken and tomatoes. Garnish with fresh basil leaves.
