Ingredients:
1.5 pounds boneless, skinless chicken breasts, cooked and cubed
4 cups broccoli florets, steamed
8 ounces mushrooms, sliced
2 shallots, finely chopped
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup chicken broth
1 cup heavy cream
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1 teaspoon Dijon mustard
Salt and pepper to taste
1 cup crushed buttery crackers
2 tablespoons melted butter

Directions:
Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced mushrooms and chopped shallots. Sauté until the mushrooms are golden brown and the shallots are translucent, about 5-7 minutes.
Sprinkle the flour over the mushrooms and shallots, stirring to combine. Cook for 1-2 minutes to remove the raw flour taste.
Gradually whisk in the chicken broth and heavy cream. Bring the mixture to a simmer and cook until thickened, about 3-4 minutes.
