These Cheesy Egg Croquettes are a delightful and crispy snack made with boiled eggs, mozzarella cheese, and a flavorful breading. They make a great appetizer or party dish!
Ingredients
1/2 teaspoon salt
7 boiled eggs, peeled and chopped
150g grated mozzarella cheese
2 tablespoons mayonnaise
1 tablespoon mustard
1 pinch of black pepper
For Breading:
- 2 eggs, beaten
- Wheat flour (for dusting)
- Breadcrumbs
- Parsley, to taste (chopped, for garnish)
Instructions
- Prepare the Filling:
- In a mixing bowl, combine the chopped boiled eggs, grated mozzarella cheese, mayonnaise, mustard, black pepper, and salt. Mix until well combined.
- Shape the Croquettes:
- Take small portions of the egg mixture and shape them into oval or round balls, about the size of a golf ball. Set aside on a plate.
- Set Up the Breading Station:
- In one bowl, place some wheat flour. In a second bowl, beat the 2 eggs. In a third bowl, add breadcrumbs.
- Bread the Croquettes:
- Roll each egg ball in flour to coat lightly, then dip it into the beaten eggs, and finally coat with breadcrumbs. Ensure they are well-coated for a crispy texture.
- Fry the Croquettes:
- Heat vegetable oil in a deep frying pan over medium heat. Once the oil is hot, carefully add the breaded croquettes in batches, being careful not to overcrowd the pan.
- Fry for about 3-4 minutes on each side or until golden brown and crispy. Use a slotted spoon to remove them from the oil and drain on paper towels.
- Serve:
- Garnish with chopped parsley and serve the croquettes warm with your favorite dipping sauce.
Enjoy your delicious Cheesy Egg Croquettes! They’re perfect for snacking or entertaining guests.
