Carrot Omelette, Economical and Delicious Dinner

Ingredients:
parsley to taste
2 carrots
salt to taste
black pepper to taste
2 eggs
100g mozzarella

How to do it:
Grate the carrots, add them to a pan with olive oil, mix well and cook for 3 minutes.
Add salt and black pepper, mix and let cook for 1 minute.
In a bowl add eggs, salt, black pepper and mix well.
Add the carrot into the bowl and mix very well.
Grease a frying pan with olive oil, add the entire mixture inside, spreading it well, cover for 5 minutes, add the mozzarella on top, the parsley, cover until the cheese melts, fold the omelet and turn to cook on both sides.
