Broccoli and Mushroom Stir-Fry

Ingredients:

2 tablespoons vegetable oil
1 pound beef strips
2 cups broccoli florets
2 cups mushrooms, sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
3 cloves garlic, minced
1 tablespoon ginger, minced
1/4 cup low-sodium soy sauce
2 tablespoons hoisin sauce
1 tablespoon cornstarch
1/4 cup vegetable broth
1 tablespoon sesame oil
2 green onions, chopped
1 tablespoon sesame seeds
Cooked rice, for serving

Instructions:

Prepare Sauce:
In a small bowl, mix the soy sauce, hoisin sauce, cornstarch, and vegetable broth until smooth. Set aside.

Cook Beef:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beef strips and stir-fry until browned and cooked through, about 5-7 minutes. Remove the beef from the skillet and set aside.

Cook Vegetables: In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.

Stir-Fry: Add the broccoli florets, mushrooms, red bell pepper, and yellow bell pepper to the skillet. Stir-fry for about 5-7 minutes, until the vegetables are tender but still crisp.

Combine Ingredients: Return the cooked beef to the skillet. Pour the prepared sauce over the beef and vegetables. Stir to combine and cook for another 2-3 minutes, until the sauce thickens and everything is well-coated.

Finish and Serve: Drizzle with sesame oil and toss to coat. Sprinkle with chopped green onions and sesame seeds.

Serve: Serve hot over cooked rice.
