Blueberry Buckle Coffee Cake

Cake:

  • Ingredients:
    • 2 cups all-purpose flour
    • 2 tsp baking powder
    • 1/4 tsp salt
    • 1/2 tsp ground ginger (optional)
    • 1/2 tsp cinnamon (optional)
    • 4 tbsp softened butter
    • 1/2 cup granulated sugar
    • 1/2 cup brown sugar
    • 2 large eggs
    • 2 tsp vanilla extract
    • 1/2 cup milk
    • 2 cups fresh blueberries, washed and patted dry
  • Instructions:
    1. Preheat your oven to 350°F (175°C). Grease and flour a 9×9 inch baking dish or line it with parchment paper.
    2. In a medium bowl, whisk together the flour, baking powder, salt, ground ginger, and cinnamon (if using). Set aside.
    3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
    4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
    5. Gradually add the flour mixture to the butter-sugar mixture alternately with the milk, beginning and ending with the flour mixture. Mix until just combined.

    • 1/2 cup all-purpose flour
    • 1/3 cup brown sugar
    • 1/2 tsp cinnamon
    • 4 tbsp softened butter, cut into small pieces

  • Instructions:
    1. In a small bowl, combine the flour, brown sugar, and cinnamon.
    2. Cut in the softened butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
    3. Sprinkle the streusel evenly over the cake batter in the baking dish.

Baking:

  • Instructions:
    1. Bake in preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
    2. Allow the buckle to cool in the pan on a wire rack for at least 15-20 minutes before serving.
