Ingredients:
2 cups of old-fashioned rolled oats
1/2 teaspoon of baking powder
1 teaspoon of ground cinnamon
1/4 teaspoon of salt
2 cups of milk (dairy or non-dairy)
1/4 cup of maple syrup or honey
1 large egg
2 tablespoons of melted butter or coconut oil
1 teaspoon of vanilla extract
1 1/2 cups of fresh or frozen blueberries
1/2 cup of chopped nuts (optional, such as almonds or walnuts)
Additional blueberries and nuts for topping (optional)

Instructions:
Preheat the oven: Preheat your oven to 375°F (190°C). Grease a 9×9-inch or similar-sized baking dish.
Mix the dry ingredients: In a large bowl, combine the rolled oats, baking powder, ground cinnamon, and salt. Stir well to distribute the ingredients evenly.
Mix the wet ingredients: In a separate bowl, whisk together the milk, maple syrup or honey, egg, melted butter or coconut oil, and vanilla extract.
Combine the mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Stir until everything is well combined. Gently fold in the 1 1/2 cups of blueberries and chopped nuts (if using).
Assemble and bake: Pour the oatmeal mixture into the prepared baking dish. Spread it out evenly. Top with additional blueberries and nuts if desired. Bake for 35-40 minutes, or until the oatmeal is set and the top is golden brown.
Cool and serve: Allow the baked oatmeal to cool for a few minutes before serving. You can slice it into squares or scoop it out with a spoon.
Notes:
This baked oatmeal can be stored in the fridge for up to 4 days and is easily reheated in the microwave or oven.
For added flavor, consider adding a teaspoon of lemon zest to the wet ingredients.
Serve with a drizzle of extra maple syrup, a dollop of yogurt, or a splash of milk.
