Baked Chicken with Broccoli and Cauliflower

Delight in a wholesome blend of tender baked chicken with vibrant broccoli and cauliflower. This hearty dish combines the savory goodness of seasoned chicken breast with the earthy flavors of fresh vegetables, all topped off with a creamy yogurt and mozzarella topping. Perfect for a satisfying dinner that’s both nutritious and delicious.

Ingredients:

  • 200g cauliflower
  • 200g broccoli
  • salt to taste
  • black pepper to taste
  • oil
  • 500g chicken breast
  • 1 onion
  • 3 cloves of garlic
  • 2 tomatoes
  • 3  eggs
  • 150g natural yogurt
  • 150g mozzarella

     

Way of doing:

Cut the cauliflower, then transfer it to a baking dish.
Cut the broccoli and add it to the baking dish.
Then add the salt, black pepper, olive oil and mix well.
Cut the chicken breasts into small pieces, then place them in the baking dish, on top of the vegetables.
Cut the onion into cubes.
In a pan add olive oil, the onion, fry, then add the garlic, mix and let it fry for 2 minutes.
Place the onion and garlic on top of the recipe.
Cut the tomatoes in half and then into slices, then place on top of everything.
Add the salt and oil.
In a container add the  eggs , salt, black pepper and beat well.
Add the natural yogurt and mix well.
Pour the mixture into the pan, over everything, then cover with aluminum foil and bake at 180 degrees for 35 minutes.
After removing from the oven, remove the aluminum foil, add the mozzarella on top and bake at 180 degrees for another 10 minutes.
