Baked Cauliflower with Tomatoes and Mozzarella

This Baked Cauliflower dish combines tender cauliflower with the rich flavors of tomatoes and melted mozzarella. It’s a simple, delicious, and nutritious meal that’s perfect for a quick dinner. With just a few ingredients, this recipe is both easy to prepare and packed with flavor.

Ingredients:

  • Cauliflower: 700 g (about 1 medium head), cut into florets
  • Eggs: 2, beaten
  • Salt: to taste
  • Black Pepper: to taste
  • Sour Cream: 1 tablespoon
  • Dried Garlic: to taste
  • Flour: 50 g (about 1/3 cup)
  • Plant Oil: for frying
  • Tomatoes: 2, sliced
  • Mozzarella: 200 g (about 7 oz), sliced

Directions:

  1. Prepare the Cauliflower:
    • Steam or boil the cauliflower florets until they are tender but still firm, about 8-10 minutes. Drain and let them cool slightly.
  2. Coat the Cauliflower:
    • In a large bowl, combine the beaten eggs, salt, black pepper, sour cream, and dried garlic. Mix well.
    • Add the flour to the mixture, stirring until smooth. Toss the cauliflower florets in the mixture to coat them evenly.
  3. Fry the Cauliflower:
    • Heat a bit of plant oil in a frying pan over medium heat. Add the coated cauliflower florets and fry until golden brown on all sides, about 5-7 minutes. Transfer them to a baking dish.
  4. Add Tomatoes and Mozzarella:
    • Arrange the tomato slices on top of the cauliflower. Season with a bit of salt and black pepper.
    • Place the mozzarella slices over the tomatoes.
  5. Bake:
    • Preheat your oven to 180°C (356°F). Bake the cauliflower dish for about 15 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    • Serve hot, garnished with fresh herbs if desired.
