Apple Pie with Decadent Soufflé Cream

This charming apple tart features a rich, buttery crust paired with a sweet and tangy apple filling, all crowned with a light and airy soufflé cream. It’s an ideal dessert for any occasion, providing a delightful mix of flavors and textures that are sure to please everyone.

Ingredients:
For the Dough (20 cm diameter):
Flour: 250 grams (2 cups)
Baking powder: 1 tsp
Butter: 90 grams (6 tbsp)
Salt: a pinch
Egg yolks: 2 pcs
Sugar: 40 grams (3 tbsp)

For the Apple Layer:
Apples: 3 pcs (~500 grams)
Sugar: 40 grams (3 tbsp)
Lemon juice: 4-5 tbsp

For the Cream-Soufflé:
Egg whites: 2 pcs
Sugar: 40 grams (3 tbsp)
Vanilla sugar: 1 tsp
Natural yogurt or sour cream: 400 grams (1 2/3 cups)
Corn starch: 30 grams (3 tbsp)

Directions:
Peel and slice the apples. Toss them with the sugar and lemon juice.

Prepare the Dough:
In a bowl, combine the flour, baking powder, and a pinch of salt.
Add the butter and mix until the mixture resembles coarse crumbs.
Add the sugar and egg yolks, mixing until the dough comes together.
Press the dough into the bottom of a 20 cm (8-inch) baking pan. Set aside.

Prepare the Apple Layer:
Spread the apple mixture evenly over the dough.

Prepare the Cream-Soufflé:
In a separate bowl, beat the egg whites until soft peaks form.
Gradually add the sugar and vanilla sugar, continuing to beat until stiff peaks form.
Gently fold in the natural yogurt (or sour cream) and corn starch until well combined.
Pour the cream-soufflé mixture over the apples, spreading it evenly.

Bake:
Preheat the oven to 170°C (338°F).
Bake the tart for 40-45 minutes, until the top is golden and set.
Allow the tart to cool before serving.
