Ingredients:

– 1 lb Large Shrimp, peeled and deveined
– 6 cloves Garlic, minced
– 1/2 cup Fresh Cilantro, chopped (including stems, leaves, and tender parts)
– 1/2 tsp Ground Coriander
– 1 Lime (zest and juice)
– 2 Scallions, thinly sliced
– 3 tbsp Unsalted Butter
– Salt and Freshly Ground Black Pepper, to taste

Instructions:

1. Prepare the Shrimp:
– Pat the shrimp dry with paper towels. Season with salt and freshly ground black pepper.

2. Make the Cilantro Lime Butter:
– In a small bowl, combine the minced garlic, chopped cilantro (reserve some for garnish if desired), ground coriander, zest of the lime, and juice of half the lime. Mix well.

3. Cook the Shrimp:
– In a large skillet, melt the unsalted butter over medium-high heat.
– Add the seasoned shrimp to the skillet and cook for about 2-3 minutes per side, or until the shrimp are pink and opaque.

4. Add the Cilantro Lime Butter:
– Reduce the heat to medium-low. Add the prepared cilantro lime mixture to the skillet with the shrimp. Stir well to coat the shrimp evenly with the buttery sauce.

5. Finish and Serve:
– Cook for an additional 1-2 minutes, stirring occasionally, until the shrimp are fully cooked and the flavors have melded together.
– Remove from heat and garnish with additional chopped cilantro and thinly sliced scallions.

6. Serve:
– Serve the Cilantro Lime Butter Shrimp immediately, hot from the skillet, as a delicious main dish.
