Ingredients:
100 g mozzarella cheese, grated
30 g green onion, finely chopped
1 tomato, thinly sliced
2 eggs
1/4 tsp salt
Pepper to taste
Butter for frying
2 spinach leaves
2 slices sandwich cheese
1 tortilla (23 cm diameter)

Directions:
Prepare the Egg Mixture: In a bowl, crack the eggs and add salt, pepper, and green onion. Stir well.
Cook the Egg: Heat a piece of butter in a frying pan (23 cm diameter) over low heat. Pour the egg mixture into the pan and cover with a tortilla.
Add Toppings: Spread mozzarella cheese on half of the tortilla, then layer with tomato slices, spinach leaves, and sandwich cheese.
Fold and Cook: Fold the tortilla in half and press down lightly. Add a bit more butter to the pan. Flip the tortilla occasionally until it’s golden brown on both sides.
