Pancake Toppings

These easy banana pancakes are so delicious just as they are…but pancake toppings are what make them fun! The base recipe is perfect for your everyday pancakes, but you can really change them up every time you make them by changing the toppings and extras.

Here are some of my favorite toppings for these banana oat pancakes:

  • Sliced Strawberries (or blueberries, raspberries, etc.)
  • Maple Syrup (try sugar-free for a healthier option)
  • Honey
  • Banana Slices
  • Chopped Nuts (almonds, walnuts, pecans)
  • Coconut Flakes
  • Whipped Cream
  • Almond Butter
  • Chocolate Chips or Chocolate Syrup

How to make blender pancakes:

  1. Place all ingredients in a high-powered blender, and blend until the batter becomes completely smooth.
  2. Heat up your griddle or skillet, and spray with non-stick spray.
  3. Use a ⅓-cup measuring cup to pour batter into cakes on the griddle.
  4. Let them cook for about 2-3 minutes on the first side (watch for bubbling so you know when to flip).
  5. Cook for another 1-2 minutes on the other side, until they turn a golden brown.

Ingredients

  • ½ cup Almond Breeze Almondmilk Blended with Real Bananas 114 grams
  • 1 ripe banana mashed (plus more for serving)
  • 1 large egg 50 grams
  • 2 large egg whites 70 grams
  • 2 tablespoons honey 44 grams
  • 2 cups rolled oats 200 grams (SEE NOTE)
  • ½ teaspoon ground cinnamon
  • ¾ teaspoon kosher salt
  • 1 tablespoon baking powder 12 grams
  • 1 teaspoon pure vanilla extract 4 grams

Optional Toppings

  • Mini Chocolate Chips
  • Banana Slices
  • Coconut Flakes
  • Whipped Cream
  • Almond Butter

Instructions

  • Place Almond Breeze Almondmilk Blended with Real Bananas, banana, egg and egg whites, honey, oats, cinnamon, salt, baking powder, and vanilla in a high powered blender.
    ½ cup Almond Breeze Almondmilk Blended with Real Bananas,1 ripe banana,1 large egg,2 large egg whites,2 tablespoons honey,2 cups rolled oats,½ teaspoon ground cinnamon,¾ teaspoon kosher salt,1 teaspoon pure vanilla extract,1 tablespoon baking powder
  • Blend until completely smooth.
  • Heat a large griddle or cast iron skillet over medium heat. Spray with nonstick spray.
  • Use a ⅓-cup measuring cup to pour batter the onto the griddle in a circle.
  • Cook for 2-3 minutes for the first side, watching for the batter to begin to bubble before flipping.
  • Turn and cook for 1-2 more minutes, or until pancake is browned on both sides to your liking.
  • Top with all the fixings and enjoy!
