Zucchini and Potato Patties

Directions:

  1. Prepare the Zucchini:
    • Grate the courgette.
    • Season with salt and leave to drain for a few minutes. This helps remove excess moisture.
  2. Prepare the Vegetables:
    • Finely chop the onion and parsley.
    • Grate the potatoes and carrots.
  3. Remove Excess Moisture:
    • Squeeze the grated potatoes well to remove excess water.
    • Similarly, squeeze the grated zucchini well.
  4. Mix Ingredients:
    • In a large mixing bowl, combine the squeezed zucchini, potatoes, chopped onion, grated carrots, and parsley.
    • Add cheese to taste.
    • Crack in the eggs and mix well.
    • Season with salt and pepper.
    • Add 4-6 tablespoons of breadcrumbs to bind the mixture.
  5. Form and Cook the Patties:
    • Heat oil in a large skillet over medium heat.
    • Form the mixture into small patties.
    • Place the patties in the skillet and cook for 8-10 minutes on each side, or until golden brown and cooked through.
