Ingredients:
For the Chicken:
2 lbs chicken breasts, boneless and skinless, cut into strips
2 tablespoons olive oil

1/3 cup honey
1/4 cup soy sauce
2 tablespoons apple cider vinegar
1 tablespoon freshly grated ginger
2 cloves garlic, minced
1 teaspoon crushed red pepper flakes (adjust based on spice preference)
1 bell pepper, cut into thin strips
2 tablespoons cornstarch dissolved in 2 tablespoons water

Directions:
Prepare the chicken:
Season the chicken strips with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 6-8 minutes. Remove from skillet and set aside.

Make the honey pepper sauce:
In the same skillet, reduce heat to medium. Add the bell pepper strips and sauté for 2 minutes.

Stir in the honey, soy sauce, apple cider vinegar, and red pepper flakes. Bring to a simmer.

Combine chicken and sauce:
