Ingredients:
For the Stir-Fry:

1 pound chicken breast, thinly sliced
2 tablespoons vegetable oil
1 medium onion, sliced
1 bell pepper (any color), sliced
1 cup sliced mushrooms
1 cup chopped celery
1 cup bean sprouts
1/2 cup sliced water chestnuts
1/2 cup bamboo shoots
For the Sauce:
2 cups chicken broth
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon cornstarch mixed with 2 tablespoons water
1 teaspoon sugar
1/2 teaspoon ground ginger

Directions:
Prepare the Chicken:
In a large skillet or wok, heat the vegetable oil over high heat.
Add the chicken slices and stir-fry until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
Cook the Vegetables:
In the same skillet, add more oil if necessary. Add the onion and bell pepper, and stir-fry for about 2 minutes.
Add the mushrooms, celery, bean sprouts, water chestnuts, and bamboo shoots. Continue to stir-fry until the vegetables are tender, about 3-4 minutes.
Make the Sauce:
In a small bowl, combine the chicken broth, soy sauce, oyster sauce, sugar, and ground ginger.
Pour the sauce mixture into the skillet with the vegetables.
Bring to a simmer and add the cornstarch slurry. Stir continuously until the sauce thickens.
Combine Chicken and Vegetables:
Return the cooked chicken to the skillet. Mix well to combine with the vegetables and sauce.
Cook for an additional 2 minutes to reheat the chicken and blend the flavors.
Serve:
Serve the Chicken Chop Suey hot, ideally over cooked rice or noodles.
