Ingredients

1/2 teaspoon salt
7 boiled eggs, peeled and chopped
150g grated mozzarella cheese
2 tablespoons mayonnaise
1 tablespoon mustard
1 pinch of black pepper

For Breading:

  • 2 eggs, beaten
  • Wheat flour (for dusting)
  • Breadcrumbs
  • Parsley, to taste (chopped, for garnish)

Instructions

  1. Prepare the Filling:
    • In a mixing bowl, combine the chopped boiled eggs, grated mozzarella cheese, mayonnaise, mustard, black pepper, and salt. Mix until well combined.
  2. Shape the Croquettes:
    • Take small portions of the egg mixture and shape them into oval or round balls, about the size of a golf ball. Set aside on a plate.
