Strawberry Cheesecake Cookies

Ingredients:
Cream Cheese Filling:
Cream cheese (softened): 8 oz
Powdered sugar: ½ cup
Cookies:
Cold butter: 1 cup
Granulated sugar: ½ cup
Brown sugar (tightly packed): 1 cup
Eggs: 2
Gluten-free 1-to-1 flour (or all-purpose flour): 3 ⅔ cups
Baking soda: 1 tsp
Vanilla extract: 1 tsp
Finely diced strawberries: ⅓ cup
Pinch of sea salt (optional)

Instructions :
Prepare Cream Cheese Filling:
In a stand mixer, beat the cream cheese and powdered sugar until creamy.
Scoop into teaspoon-sized balls on a parchment-lined tray and freeze.
Cookie Dough:
Cream cold butter, granulated sugar, and brown sugar in a mixer until smooth.
Add eggs and mix, then stir in flour, baking soda, vanilla, and salt until a thick dough forms.
Fold in diced strawberries and chill the dough for 30 minutes.
Assemble Cookies:
Preheat the oven to 350°F (175°C).
Scoop large balls of dough onto a lined baking sheet. Press an indent in the center and place a frozen cream cheese ball inside. Seal the dough around the filling.
Bake for 11-12 minutes or until just set
