SHRIMP AND PEPPER STIR-FRY

Here’s a simple and tasty dish that’s perfect for a quick weeknight dinner: Shrimp and Pepper Stir-Fry! This colorful stir-fry combines succulent shrimp with vibrant bell peppers and a savory sauce that’s sure to please. It’s not only delicious but also packed with nutrients. Ingredients:
1 lb shrimp, peeled and deveined
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 onion, sliced
3 cloves garlic, minced
1 tablespoon ginger, minced
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon rice vinegar
1 tablespoon honey or brown sugar
1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening sauce)
Salt and pepper, to taste
2 tablespoons vegetable oil
Cooked rice, for serving

Directions:
Step 1: Marinating the Shrimp
In a bowl, combine shrimp with minced garlic, minced ginger, soy sauce, oyster sauce, rice vinegar, honey or brown sugar, salt, and pepper. Let marinate for 10-15 minutes.
Step 2: Stir-Frying
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add sliced onions and bell peppers to the skillet. Stir-fry for 3-4 minutes until vegetables are slightly tender but still crisp.Remove from skillet and set aside.
In the same skillet, add marinated shrimp along with the marinade. Stir-fry for 2-3 minutes until shrimp are pink and cooked through.
Push shrimp to the side of the skillet. Stir the cornstarch-water mixture and pour into the center of the skillet. Cook until the sauce thickens, stirring constantly.
Add the cooked vegetables back into the skillet. Stir well to combine everything and coat evenly with the sauce.
Step 3: Serving
Serve hot shrimp and pepper stir-fry over cooked rice.
