Bok Choy and Shrimp Skillet

Ingredients:
1 lb (450g) shrimp, peeled and deveined
2 tbsp olive oil
3 cloves garlic, minced
1 inch (2.5 cm) piece of ginger, grated
1 bunch bok choy, chopped
1 red bell pepper, sliced
2 tbsp soy sauce
1 tbsp rice vinegar
1 tsp sesame oil
1 tbsp honey
2 green onions, sliced
1 tbsp sesame seeds (optional)
Salt and pepper to taste

Instructions:
Prepare the Ingredients: Begin by preparing all the ingredients. Peel and devein the shrimp if not done already, and chop the bok choy and red bell pepper. Mince the garlic and grate the ginger. Slice the green onions and set aside.
Heat the Skillet: In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and grated ginger, sautéing for about 1-2 minutes until fragrant.
Cook the Shrimp: Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and are fully cooked through. Remove the shrimp from the skillet and set aside.
Sauté Vegetables: In the same skillet, add a bit more olive oil if needed and toss in the chopped bok choy and sliced red bell pepper. Sauté for about 5 minutes until the vegetables are tender yet still crisp.
Combine Ingredients: Return the cooked shrimp to the skillet with the vegetables. Pour in the soy sauce, rice vinegar, sesame oil, and honey. Stir well to combine and let the mixture cook for another 2-3 minutes, allowing the flavors to meld together.
