1 tablespoon cornstarch
1 tablespoon sesame oil

For the Lo Mein Sauce:
1/4 cup soy sauce
2 tablespoons oyster sauce
1 tablespoon hoisin sauce
1 tablespoon dark soy sauce (optional, for color)
1 tablespoon rice vinegar
1 tablespoon brown sugar
1 teaspoon sriracha or chili paste (optional, for heat)
1/4 cup beef broth or water

For the Lo Mein:
8 oz lo mein noodles or spaghetti
3 tablespoons vegetable oil, divided
3 cloves garlic, minced
1 tablespoon ginger, minced
1 large onion, sliced
1 red bell pepper, sliced
1 cup broccoli florets
1 cup snap peas
1 carrot, julienned
1/2 cup mushrooms, sliced
2 green onions, chopped (for garnish)
Sesame seeds (for garnish)

Directions:
Step 1: Marinate the Beef
In a bowl, combine the sliced beef, soy sauce, cornstarch, and sesame oil. Mix well to coat the beef and let it marinate for at least 15 minutes.
Step 2: Prepare the Sauce
In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, dark soy sauce (if using), rice vinegar, brown sugar, sriracha (if using), and beef broth or water. Set aside.

Step 3: Cook the Noodles
Cook the noodles according to the package instructions until al dente. Drain and set aside.

Step 4: Stir-Fry the Beef
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and stir-fry for 2-3 minutes until browned and cooked through. Remove the beef from the skillet and set aside.

Step 5: Stir-Fry the Vegetables
In the same skillet, add the remaining 2 tablespoons of vegetable oil. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
Add the sliced onion, red bell pepper, broccoli, snap peas, carrot, and mushrooms. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.

Step 6: Combine and Cook
Return the cooked beef to the skillet. Add the cooked noodles and the prepared sauce. Toss everything together until well combined and heated through, about 2-3 minutes.

Step 7: Serve
Garnish the beef lo mein with chopped green onions and sesame seeds. Serve hot.
