Ingredients:

2 pounds beef tips or stew meat, cut into bite-sized pieces
2 tablespoons olive oil
1 large onion, finely chopped
3 cloves garlic, minced
2 cups beef broth
1 cup heavy cream
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
1 teaspoon dried thyme
1 teaspoon paprika
2 tablespoons all-purpose flour
Salt and pepper to taste
Fresh parsley, chopped for garnish

Directions:

In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the beef tips and cook until browned on all sides, about 5-7 minutes. Remove the beef from the skillet and set aside.
In the same skillet, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant.
Sprinkle the flour over the onions and garlic, stirring constantly to create a roux. Cook for 2-3 minutes until the flour is lightly golden.

Gradually whisk in the beef broth, stirring constantly to avoid lumps. Bring to a simmer.
Stir in the heavy cream, Worcestershire sauce, soy sauce, dried thyme, and paprika. Season with salt and pepper to taste.
Return the browned beef tips to the skillet, ensuring they are submerged in the gravy. Reduce the heat to low, cover, and simmer for 1-1.5 hours, or until the beef is tender and the gravy is thickened.
