Ingredients:
1 lb (450g) shrimp, peeled and deveined
2 tbsp olive oil
3 cloves garlic, minced
2 tbsp unsalted butter
1 tbsp Old Bay seasoning
1/2 tsp red pepper flakes (optional)
1/2 cup chicken broth
1/2 cup coconut milk
1 lemon, juiced
12 oz (340g) pasta (such as linguine or spaghetti)
1/4 cup grated Parmesan cheese
Fresh parsley, chopped (for garnish)
Salt and pepper to taste

Instructions:

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Prepare the Shrimp: In a large skillet, heat the olive oil over medium-high heat. Add the shrimp and sprinkle with Old Bay seasoning. Cook for about 2-3 minutes on each side until the shrimp are pink and cooked through. Remove the shrimp from the skillet and set aside.

Sauté the Garlic: In the same skillet, add the butter and minced garlic. Sauté for about 1-2 minutes until the garlic is fragrant. If using, add the red pepper flakes for a bit of heat.

Make the Sauce: Pour in the chicken broth and coconut milk, stirring to combine. Bring the mixture to a simmer and let it cook for about 3-5 minutes until slightly thickened.

Combine Pasta and Shrimp: Add the cooked pasta to the skillet, tossing to coat it in the sauce. Return the cooked shrimp to the skillet and add the lemon juice. Toss everything together until well combined and heated through. Season with salt and pepper to taste.

Serve: Transfer the pasta and shrimp to serving plates. Sprinkle with grated Parmesan cheese and garnish with chopped fresh parsley.
